When barrels do as they please and start fermenting again. When a winemaker does as she pleases and leaves the wine to her own devices, ferment it every summer, six years in a row.
And when the wine finally settles down and accepts to be bottled, we are in the presence of a wild Sauternes, with an air of rancio. Olé!
