In 2007, Les Bournais was vinified dry, with just 4.8g/of residual sugar. Driven as usual by this fine acidity, it unfurls its mineral lace on a full-bodied palate of a very nice length.

The vines are pruned and gobleted, harvested with successive sorting, yields of around 35hecto/hectare
Pneumatic pressing of the harvest, fermentation on indigenous yeasts in demi-muids (600-litre barrels). No malolactic fermentation.
