The Spéciale Cuvée is a blend composed of an average of 60% Pinot Noir, 25% Chardonnay and 15% Pinot Meunier, harvested in about thirty crus in the Marne department. Chardonnays and Pinot Noirs come from Grands Crus and Premier Crus. The blend includes 5 to 10% reserve wines that have been kept in magnums for several years. Once assembled, the Spécial Cuvée is kept for at least three years before being put on sale. This is what gives it this vinosity, this style specific to the house of Bollinger.
