Apr\u00e9s la r\u00e9colte a lieu une mac\u00e9ration sur peau qui dure deux semaines, avec relevages automatiques des mo\u00fbts. les vins sont ensuite mis en barriques(peu ou pas de bois neuf) et \u00e9lev\u00e9es durant 30 mois.
