The Grandes Jorasses from Domaine Belluard is made from the Altesse grape variety, a great Savoyard grape variety. A late-ripening grape variety that does particularly well on the slopes of Ayse at an altitude of 450 metres. The hillside is south-facing with a soil composed of clay-calcareous strata. The controlled yields (40 hl/ha) make it possible to obtain, with the help of a very careful viticulture, a perfect ripeness of the berries. Vinification is done gently with pneumatic pressing and fermentation on indigenous yeasts. On this grape variety, Dominique Belluard extends the ageing process by 4 months compared to the other vintages. Light filtration on white soil.
