An emblematic cuvée of the estate in demi-sec, it is a wine with a jagged character. Its finesse unfolds around a refreshing minerality. Its sweetness (34 grams of residual) counteracts notes of baked apple and fresh pear. A small marvel of balance
Density: 6600 vines/hectare
Age of the vines: 30 to 90 years
soils: composed of clays and coarse flint elements constituting the Parakeets. Subsoil made up of tufa, chalk that remains within reach of the roots.
The vines are pruned by guyot and gobelet pruning, harvested with successive sorting, yields of around 25 hecto/hectare
Pneumatic pressing of the harvest, fermentation on indigenous yeasts in demi-muids (600-litre barrels). No malolactic fermentation.
