Domaine Belluard’s traditional Ayse Mont-Blanc Brut Zéro method is made from the Gringet grape variety, an old autochthonous grape variety from the Arve valley in Haute-Savoie. A late-ripening grape variety that does particularly well on the slopes of Ayse at an altitude of 450 metres. The hillside faces south with a limestone scree soil from the Chablais Massif, with clay-limestone strata. Vinification is done gently with pneumatic pressing and fermentation on indigenous yeasts. The wine is aged for 3 years on slats.
