Domaine Belluard’s traditional Ayse 2015 method is made from the Gringet grape variety, an old autochthonous grape variety from the Arve valley in Haute-Savoie. A late-ripening grape variety that does particularly well on the slopes of Ayse at an altitude of 450 metres. The hillside faces south with a limestone scree soil from the Chablais Massif, with clay-limestone strata. Vinification is done gently with pneumatic pressing and fermentation on indigenous yeasts. The wine is aged for 2 years on slats.
Here is a real bubble of the mountains, it’s joyful and sparkling like a torrent , there’s gas, we’re at altitude. The Gringet grape variety likes this type of vinification. Its fruity character gives fullness to this festive bubble!
