The Alps of Domaine Belluard is made from the Gringet grape variety, an old autochthonous grape variety from the Arve valley in Haute-Savoie. A late-ripening grape variety that does particularly well on the slopes of Ayse at an altitude of 450 metres. The hillside is south-facing with a soil composed of limestone scree from the Chablais massif. The controlled yields (40 hl/ha) make it possible to obtain, with the help of a very careful viticulture, a perfect ripeness of the berries. Vinification is done gently with pneumatic pressing and fermentation on indigenous yeasts. 60% of the wine is aged in egg-shaped concrete vats. Light filtration before application and gentle suffition (-30mg of total SO2)
